  • The roots of ice cream can be traced back to around the times of 4000 BCE. During this period, ice cream was accidentally invented by the Chinese through freezing milk and rice mixtures. Later, this process was performed by Italians in the West. These desserts were later introduced to France around 500 BCE.
  • Evidence also reveals the existence of early forms of ice cream in ancient Persia, Greece, and Rome. In Persia, around 500 BCE, a frozen dessert called “sharbat” was created by blending fruit juices and sweetened ice. Different toppings were sprinkled on these desserts. In Greece and Rome, desserts were made by blending mountain snow with fruits and honey.  
The Evolution in the Middle Ages
  • During the Middle Ages, Arab cultures started modifying frozen desserts into treats that were identical to modern-day sorbets. These delectable treats were flavoured with sugar and fruits, and they were hugely popular in the Middle East. These practices spread to Europe, and during this time, the foundation for modern ice cream was established. A dessert called “sherbet” emerged, composed of fruit juice, sugar, and water.
  • The concept of ice cream continued to evolve in Europe. Novel ingredients such as eggs and cream were introduced, providing a creamier and richer texture. It is believed that Marco Polo travelled to China and brought back the recipe for an ice-cream-like dessert to Italy. Historians estimate that ice cream evolved from this recipe during the 16th century.

  • During the 16th and 17th centuries, Italy and France emerged as hotbeds of ice cream innovation. Italian people tried using different creams and flavorings to create desserts. They eventually produced what we now refer to as gelato. When the Italian noblewoman Catherine de’ Medici married King Henry II of France, she brought her chefs who introduced ice cream recipes to the French court. Thus, the dessert became popular among the French nobility. Ice cream soon created waves in Europe, turning out to be a luxury item that was mainly relished by the aristocracy.
  • During the early 18th century, ice cream spread to American colonies. George Washington and Thomas Jefferson were known to be avid fans of the dessert. During the late 18th century, ice cream parlours became social hotspots. They were enjoyed by people of all backgrounds and were no longer confined to the elite.
Industrial Revolution and Mass Ice Cream Production

The advent of the industrial era witnessed a revolution in the history of ice cream. In 1843, Nancy Johnson invented the hand-crank ice cream maker, founding a new method for the processing of ice cream desserts. With electric freezers, the uninterrupted refrigeration of mass-produced ice cream products became possible. Hence, the price of ice cream drastically declined, and the dessert became popular among the masses. This led to the commercialization of ice cream, and ice cream production began to be done on a larger scale. Soda fountains and ice cream parlours became a common sight.
